Cast Iron Blackened Red Snapper: Red Snapper fillet, rubbed in southern creole spices and seared in a cast iron pan. Served with caramelized zucchini and brown rice folded with traditional creole vegetables. Finished with confit tomatoes.

Shrimp Cocktail: One dozen jumbo shrimp, gently poached in a blend of lemon, white wine and Old Bay seafood spice.  Served chilled with homemade spicy cocktail sauce.    

Lowcountry Wedge Salad: Crisp lettuce wedge served with heirloom tomatoes, chopped Applewood smoked bacon, bleu cheese crumbles and a creamy buttermilk dressing. Garnished with fresh cracked pepper.   

Skinny Margarita: A blend of fresh squeezed lime juice, fresh orange juice, grapefruit juice and sweetened with agave!

Heart Smart Red Snapper is taste smart

Prepared per the enclosed recipe card the Blackened Red Snapper was moist and flakey, the blackening season was perfect. The Creole Brown Rice was delicious, and the perfect choice for the snapper as was the zucchini.
